Can you sacrifice after declaring blockers?
If you sacrifice an attacking or blocking creature during the declare blockers step, it won’t deal combat damage. If you wait until the combat damage step, but the creature you wish to sacrifice is dealt lethal damage, it’ll be destroyed before you get a chance to sacrifice it.
Can you sacrifice a creature that is blocking?
What the hell? If the creature is declared as a blocker and then is sacrificed, killed with spells/abilities, ecc.. the attacking creature is still considered blocked and deals no damage.

No, you can’t lock in that creature for sacrifice. If you do respond to Eldrazi Monument and sacrifice a creature, it just means that that particular creature won’t exist when you are told by Eldrazi Monument to “sacrifice a creature”. As chaikov says, the difference comes up with targets.
