What happens when a land becomes a creature?

When a land becomes a creature, it is still a single permanent. It just means it can die to anything that would kill a creature AND anything that would destroy a land. If it is destroyed in either way, that permanent will go to the graveyard. It’s not possible for “only the creature” to die.

What is untapped land?

Lands that can enter the battlefield untapped are the most useful; lands that filter mana are less powerful than lands that produce mana; and lands with extra abilities or constraints on their mana production need to be evaluated in the context of specific decks.

Yes. Unless otherwise specified, activated abilities can be played at any time you could play an instant (like, for example, in response to a spell that would destroy all creatures). You can sacrifice creatures before they’re destroyed, which it sounds like you have time to do in that case.

Does Lifelink only apply to combat damage?

The ability causes life gain whenever a source with lifelink deals any damage, not just combat damage.

Is summoning sickness the same as tapped?

Conversely, summoning sickness does not affect a creature’s status. Being summoning sick does not change whether a creature is tapped vs. untapped or face up vs. face down.
